Ode to Muffins (with Recipe!)

I don't know about you but I could eat muffins everyday! Almost cake-like, they are the perfect snack, breakfast even dessert. There are so many add-ins and kinds that the possibilities (and tastes!) are endless! Some of my favorites are Aldi's blueberry box mix (best box mix seriously!), any kind of chocolate/chocolate chip (because I have a serious sweet tooth), raspberry or strawberry rhubarb in the summer, poppy seed (see bread recipe here) apple cinnamon and banana! That's a lot of favorites :)


We send these along with our Right Relief Quiche meal. They are hearty and also freeze well.


Applesauce Oat Muffins

Ingredients

1 1/4 cup oats

1 1/4 cup applesauce

1/2 cup milk

1 egg

1 tsp vanilla

4 TBSP melted butter

1/3 cup sugar

1 cup whole wheat flour

1 tsp baking powder

3/4 tsp baking soda

1 tsp cinnamon

1/4 tsp salt


Instructions

Preheat oven to 375 degrees. Line muffin tins with liners (usually 15).

Stir together oats, applesauce, milk, egg, vanilla, butter and sugar

In large bowl mix the remaining dry ingredients.

Make a well in the center of the dry ingredients and pour in the applesauce mixture. Stir just until combined.

Spoon batter evenly into muffin cups. Bake 15-18 minutes until toothpick in center comes out clean. Remove to cooling rack.
