Easy Shepherd's Pie casserole

Right Relief Shepherd’s Pie

  • 1 onion chopped

  • 1 pound ground beef

  • 2 tablespoons flour

  • 1 tablespoon ketchup

  • ¾ c. beef broth

  • 1 bag frozen carrots (steam in bag kind is best!)

  • 1 container Bob Evans classic mashed potatoes

  • ¼ c. shredded cheddar cheese

Cook onion in olive oil until clear. Add beef and brown well. Drain. Add flour and cook for 1 minute. Add ketchup and broth, bring to a boil, reduce to a simmer and cook for 5 minutes. Steam carrots and then mash. To assemble, layer beef in bottom of casserole dish. Top with mashed carrots, then the potatoes. Finally top with cheese and bake for 20 minutes at 375.
