This is a recipe that you can alter to your liking (adding different/extra veggies) and has an easy crust that IS homemade AND quick! It is perfect for winter or a damp/chilly spring day as we've been having!
1 cup sour cream
1/2 cup butter, softened
1 cup flour
1 tsp. baking powder, salt, sage
1/2 cup chopped carrots & diced onion
2 colors of diced bell peppers (about 1/2 a pepper each)
2 tblsp. butter
2 cups cubed cooked chicken
1 can cream of chicken soup
1/2 cup shredded cheddar cheese
For the crust, beat the sour cream, butter and egg. Add flour, baking powder, salt & sage. Mix well (will be sticky). Spread to cover the bottom and sides of a pie pan. Sautee veggies in butter over medium heat to crisp/tender. Add the cooked chicken and soup; mix. Spread mixture in pie crust and top with the cheese. Bake at 400 for 30-35 minutes and let stand 10 minutes.
I actually brought this recipe to my grandparents once last year and my Grandpa declared it "the best meal he'd ever eaten." I know he's biased, but still will take the compliment :) Enjoy!
