I just had another request for this salad recipe on Easter weekend and it received more rave reviews. It was a hug hit when we served it at Kathy's House too!
It has bacon... need I say more?!
Ingredients
1/2 lb fresh spinach- wash & remove stems
1/2 head of lettuce chopped
Combine greens.
Slice and/or dice (depending on how much you like raw onion flavor) 1/2 of an onion and sprinkle on top.
Fry 1/2 lb of bacon and once cool, crumble on top of salad
Mix dressing ingredients and pour over salad. Toss and enjoy!
Dressing
1/2 c. mayo
1/2 c. sugar
1/4 c. Heinz salad vinegar (or apple cider vinegar if you can't find)
*Tip: I've started baking bacon in the oven for about 15 minutes at 400 degrees on a foil lined baking sheet with a rim. Less mess!
*This does not keep well so make sure you have a bigger group to eat it all up!
