Need a simple crowd pleaser? This is it!
1 lb ground beef or turkey
1/2 onion chopped
1 bag tortilla chips (12 oz)
*This would be amazing with Doritos as a substitute!
1 can red enchilada sauce (28 oz)
1 cup salsa of your choice
1 bag shredded cheddar or Mexican blend cheese (32 oz)
Sauté onion in skillet until soft. Add beef and brown (don't need to drain after).
Preheat oven to 350 and prepare a 9x13 pan with cooking spray.
Break up chips while still in the bag. Place everything including the cooked beef into a large bowl minus 2 cups of the cheese. Mix thoroughly and pour into pan making sure it is evenly distributed. Top with remaining cheese.
Bake 35 minutes and then cover with foil for another 10 minutes to prevent the cheese from getting too brown. Top with green onion, guacamole, diced tomatoes, sour cream, jalapeños... any of your favorites!
I served with cauliflower taco rice, refried beans and chips/salsa! Enjoy!
