As we know, I love carbs. Carbs=Life!
My Dad usually made blueberry muffins to go with my mac and cheese birthday dinner. Why? I don't know except that they were carb-y and delicious. Seems like an odd combo I know but it was delicious. His motto was: the more carbs in a meal the better!
This is probably my 2nd favorite muffin/bread recipe. It was my "Grandma" Alice's favorite. She lived next to us in Peshtigo growing up and would stay with my sister and I after school until my Dad got home. She and Pat and Jan were our neighbors who became family. We loved getting together with them for snacks or dinner or special occasions. They moved to Colorado when I was just starting middle school but came back for my high school graduation and many other occasions. Pat even walked me down the aisle at my wedding in 2015! Such awesome memories!
Every time I make this bread I think of Grandma Alice and Pat & Jan. Those memories bring me Relief! I hope that the meals we make for caregivers elicit those same "warm fuzzies" & memories.
Here is the recipe:
1 package yellow cake mix
1 small box instant vanilla pudding
1/4 cup poppy seeds
4 eggs
1 cup hot water
1/2 cup oil
Combine all ingredients and mix well for 4 minutes. Pour into 2 bread pans. Bake at 350 for 40-45 minutes. Freezes well. Can also make muffins and/or substitute the vanilla pudding for lemon flavored or add some lemon extract or zest if you like!
